Simply Nutty Kale
1 bunch Kale - any type works
1/2 cup sliced almonds
olive oil - just enough to coat pan
salt to taste
fresh ground black pepper
** experiment with your favorite spice blend or herbs to change it up**
** add paneer for a bit of protein and you have a light summer dinner **
Wash, dry and tear Kale into 2"-3" pieces
Heat olive oil
Toss Kale into hot pan, stirring until med soft
Add almonds, salt and pepper
Continue stir frying until Kale reaches desired tenderness
Voila! Quick and nutricious greens.
