Asian Cucumber Slaw

1 large cucumber
2 medium carrots, peeled
2 tbsp rice vinegar
1 tbsp cider vinegar
1 tsp water
1/2 tsp sugar
1/2 tsp sesame oil
2 tsp sesame seeds

2 tsp celery seed
 1/4 cup chopped cilantro

Use a julienne peeler or grater to shred the cucumber and carrots into long strips (Or finely chop carrots in food processor and cut cucumbers in cubes.  Just doesn't resemble slaw this way). Toss the vegetables in a medium bowl, along with both vinegars, water, sugar, and sesame oil. Toss to coat evenly. Garnish with sesame seeds, celery seed, cilantro, red pepper flakes, or other seasoning you like.. Chill until ready to serve. Best served cold.
