Baked Apples

A tasty treat and much quicker to make than pies (also gluten free)! Mim says she likes to make a big tray of these and eat them hot or cold with yogurt on them. Ice cream, whipped cream or milk would also be grand!

8 apples, cored
½ cup brown sugar or about a 1/3 cup of maple syrup or honey
1 cup raisins
1 cup chopped nuts
2 Tbsp melted butter or oil
1 tsp cinnamon
Dash of cloves or nutmeg

Directions
1.) Preheat your oven to 400 degrees. Core the apples and place them into a baking dish. Set a pot of water on the stove to boil. While you are waiting, combine all the ingredients, aside from the apples, in a large bowl, mixing them together thoroughly.

2.) Stuff the apples with the sugar mixture and pour a 1/2 inch of boiling water into the bottom of the baking dish. Bake the apples at 400 degrees until they are cooked to your liking. I usually use a knife to check how tender they are.

Variations

Use warm apple cider instead of boiling water in bottom of baking dish.
