Edamame Side Dish


1 pint edamame beans – cooked whole in boiling water for 5 minutes, cooled and beans popped out of pod

1 sweet red pepper

2 tablespoons peanut oil

¼ cup pineapple juice

1 tsp salt


Heat oil in a fry pan or wok. Add edamame and additional ingredients. Stir fry until hot and red pepper is cooked. Salt and serve.
