Tomato Jam

Recipe courtesy of Katie Bingham

3 tomatoes, approx 1 ½  lbs

1 ½ cup sugar

Zest of 1 lemon

Juice of 1 lemon

Pinch of Cayenne

Pinch of Cinnamon

Directions:

  1. Combine all ingredients in a heavy sauce pan.
  2. Allow to cook till thick and jammy approx. 1 hour
