Vegie Wrap and Sooo Many Greens

Leafy green overload?  Use spinach, kale or chard chopped and cooked in your favorite pasta dish, meatloaf or, my favorite, scrambled eggs. 

Vegie Wrap for a lunch to go. 

We also like to throw a mixture of vegies in the food processor and finely chop them.  Really, use ANY of the vegies you have. (peppers, zucchini, broccoli, cauliflower, kale, spinach, chard, onion...) The only thing I wouldn't leave out is onion.  You can stir in a little grated cheese or a little chopped ham or chicken, too.  Stir in some ranch or honey-mustard salad dressing and its ready to put on a tortilla shell.  Wrap it up and enjoy.  These work great for sack lunches and most of the prep can be done ahead of time.  Just keep your mixture in the refrigerator ready to put on the shells.  Make it even healthier and use some of your leafy greens to wrap the chopped mixture.  Or, Mission brand's "carb balance" shells are even better.  I've found the kids like a wrap prepared like this rather than big pieces of vegies and they are a lot less messy to eat.
