Winter Squash & Ginger Soup

Use any mix of our wonderful winter squashes.


Winter squash, peeled and cubed
2-3 teaspoons fresh ginger, finely diced
1 carrot, chopped
1 quart chicken broth
Salt and pepper to taste
Cream or crème fraiche

Cook squash, ginger, carrot, salt and pepper in chicken broth until tender. 
When cool enough, puree with an immersion blender.

Serve in bowls each topped with a dollop of cream or crème fraiche.
