Simple Scallion Pancakes
Simple Scallion Pancakes.
These pancakes are tasty and simple to make. Pair them with sautéed turnips, bok choy stir fry or get really creative and add shredded greens to the batter itself!
Ingredients
3 Eggs
3 Cups flour (wheat or rice)
6 -8 Scallions or half as many green garlic stalks/scapes
Juice of one lemon or lime
¼ Cup minced cilantro
Salt and Pepper to taste
2 Cups water
Instructions
1.) Combine the ingredients in the order that they are listed above. Be sure to stir the mixture so that there are no pockets of flour on the bottom of the bowl. When it's time to add the water do so a half cup at a time, stopping when you've reached a workable texture.
2.) Heat up a pan and add a layer of cooking oil to it. Pour the batter into the pan so that the pancakes are the size you desire. Cook until golden brown on each side.
3.) Serve with tamari/soysauce for dipping, or maybe even some peanut sauce!
Variations
Add hot peppers or shredded greens to the batter.
